What is Locust Bean Gum?
Locust Bean Gum (LBG), also known as carob bean gum, is a natural galactomannan extracted from carob seeds. It is used as a thickening and stabilizing agent, particularly valued for its synergistic gelling effect when combined with carrageenan or xanthan gum. LBG is widely applied in food processing—especially in dairy and dessert products—to enhance creaminess and prevent syneresis. It’s also used in personal care and pet food for its excellent viscosity and clean-label appeal.
